  • 2 tablespoons of Cajun seasoning (or to taste)
  • 1 teaspoon of hot sauce (or to taste)
  • 2 bay leaves
  • Freshly ground black pepper (to taste)
  • Cayenne pepper (to taste)

Instructions:

  1. Heat the olive oil in a large pot or dutch oven over medium-high heat.
  2. Add the andouille sausage to the pot and cook until it is lightly browned, about 5 minutes.
  3. Add the chicken pieces, bell peppers, onion, and garlic to the pot. Cook until the chopped vegetables are tender and the chicken is cooked through, about 8 minutes.
  4. Sprinkle the flour into the pot and stir to combine with other ingredients. Cook for 1 minute while stirring continuously so that no lumps form in the mixture.
  5. Add the chicken stock or broth to the pot and stir to combine with other ingredients. Bring mixture to a boil, then reduce heat to medium-low and let simmer for 15 minutes.
  6. Add the Cajun seasoning, hot sauce, bay leaves, black pepper, and cayenne pepper (to taste). Stir to combine all ingredients and cook for an additional 5 minutes.
  7. Serve the Cajun gumbo hot with your favorite side dishes such as rice or grits.
