  • Salt & pepper to taste
  • 1/2 cup heavy cream
  • 1 cup diced tomatoes (fresh or canned)
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons green onion, minced (for garnish)


  1. Heat the bacon grease or butter in a large skillet over medium heat. Once hot, add the bell peppers and onion and cook for about 5 minutes until softened.
  2. Add the garlic and cook for an additional minute then add corn mixture and corn milk (if using). Cook for 4-5 minutes more until all of the ingredients are combined and heated through.
  3. Add cajun seasoning, salt & pepper to taste and stir together until everything is well blended.
  4. Pour in the heavy cream, stir to combine then reduce heat to low and cover the skillet. Simmer for 15 minutes, stirring occasionally.
  5. Uncover the skillet and add diced tomatoes and parsley then simmer for 5 more minutes before removing from heat.
